Duchess Potatoes recipe


Ingredients:

2 ½ lbs Yukon gold potatoes

1 tsp truffle salt

1 tsp onion powder

1 tsp garlic powder

4 tbsp butter

1-3 tbsp milk*

½ cup shredded cheese

4 egg yolks

Procedure:
Cut the potatoes and boil until tender. Heat the butter and spices together. 

When the potatoes are done, drain and put into a work bowl, add the butter mixture, and mash using a stand mixer, ricer, or hand mash. 

As the potatoes break down and cool they may start to dry, add one tablespoon of milk at a time, then add the shredded cheese. Add egg yolks, one at a time, until combined, and add to a piping bag fitted with a large tip.

Pipe the potatoes to your desired shape and bake at 425°F for 15-20 minutes.
